Blueberry Greek Yogurt Pancakes

These Blueberry Greek Yogurt Pancakes so simple and tasty! The pancakes are fluffy and airy and there is a pop of sweet blueberries in almost every bite!

Ingredients
  • 1 1/2 cups all purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp granulated white sugar
  • 1/4 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1 egg
  • 1 cup milk, I used 2%
  • 3/4 cup plain Greek yogurt, I used Fage Total 2%
  • 2 tbsp melted butter
  • 1 1/2 cups fresh blueberries, plus more for serving
Instructions
  1. In a large bowl sift together flour, baking powder, salt and sugar

  2. In a separate bowl, whisk together the egg, milk, yogurt, vanilla and cinnamon

  3. Combine the wet and dry ingredients and whisk together until smooth

  4. Add in the melted butter and stir until smooth

  5. Add in the blueberries and gently combine. (You can also skip this step and add the blueberries to each individual pancake while cooking them).

  6. Heat a greased griddle, or large skillet, to medium high heat and add about 1/4 cup of pancake batter (and blueberries) and cook until the batter begins to set slightly and bubbles appear in the batter

  7. Flip the pancakes and continue to cook 1-2 more minutes until cooked through. Repeat until all the batter has been used

  8. Serve immediately topped with butter, extra blueberries and warm syrup!

  9. Enjoy!
