I am back on my “trying to eat healthier” kick this week. So far I am 0-3 in the sweets department.

On Easter, my mom brought over a cute little basket filled with all my favorite candies. So, of course I had to rip open the bag of jelly beans and immediately devour a few handfuls. I keep taking a few jelly beans at a time and then closing the bag (like that’s going to stop me)- but inevitably I keep coming back for just a “few” more…the bag is almost gone.

Then someone brought some fresh-out-of-the-oven Krispie Kreme donuts to my office yesterday.  Like I said previously, you couldn’t pay me to turn down a doughnut, so….there was that.

And THEN after dinner last night I decided I couldn’t let the rest of my Fruity Pebbles Funfetti Poke Cake from Easter go to waste.

Oh, and then there was that small cup of frozen yogurt AJ brought home for me- but we won’t talk about that…

So yeah, I am basically in need of a healthy dinner…for at least the next few days!

I really like corn, black beans, cheddar cheese, tomato and avocado, but feel free to get creative and add your own flare!

Of course, as I am typing this post, my wheels are turning and I am coming up with some other topping ideas that would be delicious…

A few dashes of hot sauce, some crunchy tortilla strips, some fresh pico de gallo and a dollop of sour cream is never a bad idea.

Turkey Taco Bowls with Cilantro Lime Rice

These Turkey Taco Bowls are a healthier twist on a classic taco recipe with a little less guilt.

Ingredients

For Cilantro Lime Rice

  • 2 cups cooked brown rice (I cooked my rice in chicken broth)
  • 2 tbsp fresh squeezed lime juice
  • 1/3 cup chopped fresh cilantro
  • salt and pepper to taste
  • 1 tbsp butter

For Taco Bowls

  • 1 lb Turkey Taco Meat (see recipe on blog)
  • 2 cups cilantro lime rice
  • 1 can black beans
  • 1 small can sweet corn
  • 1 cup shredded cheddar cheese
  • 1 avocado diced
  • cherry tomatoes sliced in half

Instructions

  1. Cook turkey taco meat per recipe instructions (see blog post for instructions)

  2. For Cilantro Lime Rice: Cook rice per box instructions (I used chicken broth instead of water). After the rice is cooked, squeeze in about 2 tbsp. of lime juice, stir in chopped cilantro, season with salt and pepper to taste and stir in 1 tbsp. of butter

  3. Put rice in the bottom of a bowl, top with turkey taco meat and then top with cheddar cheese, tomatoes, avocado, corn and black beans- or the toppings of your choice.

  4. Enjoy!

Recipe Notes

Hot sauce, pico de gallo, crispy tortilla strips and sour cream would also be really delicious toppings
