Hello Friday! And Happy Cinco de Mayo, friends!

However you’re celebrating today, I’m sure at least one margarita is in the cards for you and I have the perfect one to make!
This Spicy Jalapeno Grapefruit Margarita is sure to get your Cinco de Mayo fiesta started off right!
We will be enjoying these margaritas with plenty of my Instant Pot Tacos al Pastor and I can hardly wait!
Tequila is usually my liquor of choice, and I basically love any type of cocktail with grapefruit juice, so this Jalapeno Grapefruit Margarita is right up my alley in terms of the perfect cocktail.
This margarita is slightly spicy, slightly sweet and perfectly tart- and it is sure to satisfy all your taste buds!
This simple and delicious Jalapeno Grapefruit Margarita starts with a jalapeno infused simple syrup, some fresh squeezed lime juice and a couple slices of jalapeno, followed by a good pour of tequila and then it is topped off with some grapefruit juice and a splash of soda water- or soda, hold the water (whatever you prefer).
A salted rim is optional, but it is a must in our house because in my opinion, no margarita is complete without a salted rim.
Now, I don’t think this margarita is super spicy the way I make it, but if you are sensitive to spice, I would start with fewer jalapeno slices and remove the seeds and membrane.
On the other hand, if you like spice and want to kick things up a notch, I would suggest leaving in the seeds and membranes. (Keep in mind, the longer the jalapenos sit and infuse, the spicier the drink becomes).
If you’re feeling a bit wild and REALLY like spice, you could muddle the jalapenos with lime juice and simple syrup before adding the rest of the ingredients.

To make the simple syrup:
Pour equal parts sugar and water in a small sauce pan over medium heat. Stir until the sugar has dissolved into the water.
Add the Jalapeno slices (including seeds and membrane) and remove from the heat. Set aside until cooled.
Pour the syrup into a mason jar, or sealed container until ready to use.
For a salted rim:
Pour salt onto a plate and rub a sliced lime along the rim of your glass. Dip the rim into the plate of salt.
Into a cocktail glass add simple syrup, fresh squeezed lime juice, jalapeno slices and tequila
Add enough ice to fill the glass and then pour in grapefruit juice and top off with a splash of soda
