If this PB&J Smoothie Bowl is not one of the tastiest, most simple and nutritious, prepare-ahead breakfast recipes out there, I don’t know what is.
Now, I’m not even going to pretend to be a “healthy” food expert.
I mean, lets me honest, ice cream takes up about 25% of the real estate in my freezer and you couldn’t pay me to turn down a doughnut or a slice of pizza. But, for the most part, I like to at least try to make an effort to eat a somewhat balanced diet.
There are grapes in wine, aren’t there? (You really should be judging me right now).
In all seriousness though, and depending on who you ask, fruit, yogurt and nuts are a mostly good-for-you combination. So, in my opinion, that makes this PB&J smoothie bowl the perfect healthy breakfast option.
This PB&J smoothie bowl is so easy and can even be prepared ahead of time by making freezer packets of fruit and pre-slicing your toppings. Then, when morning rolls around, all you have to do is throw everything into the blender, blend it up and then pour it into a bowl and top with your favorite toppings.
Easy as pie! (But much more healthy than pie) š
The first time I came across a recipe for a smoothie bowl I sat there in awe and silently thanked whoever came up with the idea. If you ask me, most of the time smoothies are rather difficult to sip through a straw, and there is absolutely no way to sip fresh fruit slices or nuts through a straw!
Enter the smoothie bowl! The best of both worlds. A smoothie AND fresh toppings all in one bowl. Now you really can have your cake and eat it too! (Here I go again with unhealthy food references in my “healthy” food post. Sorry, guys!)
Anyways, IĀ remember going through a period in my life when I made a smoothie for breakfast every morning and no matter what, I almost always added a banana, strawberries and peanut butter. So, a PB&J smoothie bowl was an obvious choice for me.
The peanuts add a nice crunch, and the sliced strawberries and bananas add a great level of freshness that you just don’t find in a regular smoothie.
You could even get fancy and drizzle some honey over the top for an added level of sweetness. Um, yum!
