Growing up, Funfetti cake was always a favorite of mine. (For real though, who doesn’t love Funfetti cake?).
And then I discovered the magic of a poke cake and my eyes were opened up to a whole new world of deliciousness.
So, naturally I decided to do a mash-up of my two favorite cake recipes- and then I added Fruity Pebbles for good measure. Because, why not?
Ladies and gentlemen, I present to you, one of the most moist, delicious and simple dessert recipes ever – Fruity Pebbles Funfetti Poke Cake!
Oh. Em. Gee. Excuse me a moment while I wipe the droll off my face…
This Fruity Pebbles Funfetti Poke Cake is seriously yummy and seriously easy to make.
It is the perfect poke cake recipe for kids and adults alike!
And let me tell you, the Fruity Pebbles really put this cake over the top.
In my opinion, Fruity Pebbles make all things in life better. If you’ve never had a Fruity Pebbles doughnut or Fruity Pebbles in your ice cream you are not living.
Any-who, on to the simplicity of this recipe.
First you bake a Funfetti cake following the box instructions. Then, after it has cooled slightly, you poke holes all over the cake using the rounded end of a wooden spoon or a straw.
Then you add two boxes of instant french vanilla pudding to a bowl with 4 cups of milk, whisking until only slightly thickened (you will not want the pudding to set completely). Before the pudding sets, pour it over the entire cake so that it can fill the holes.
Then, once the pudding has set, spread whipped cream over the top of the pudding and top with Fruity Pebbles. (Note: If not serving immediately, do not top with Fruity Pebbles until you plan on serving the cake, as the Fruity Pebbles will get a little soggy).
Then you take a little sample bite when no one is watching- just to make sure it tastes good 😉
