Ahhh….cool, light and refreshing. This Fresh Strawberry Mojito is the perfect summertime cocktail!
Is there anything more satisfying on a hot summer day than a cool cocktail?
I really don’t think so. Except maybe a cool cocktail on the beach in Maui- hey, a girl can dream right?
This cocktail is so yummy and seriously easy to muddle together. (Ha! See what I did there?) – I know, I’m embarrassing.
Anywho- this simple cocktail features fresh muddled strawberries and sugar (my favorite!), sweet mint, tart lime AND the perfect hit of light rum, all topped off with perfectly bubbly soda water.
Mmm, mmm, mmm!
Things are heating up quickly here in the great state of Arizona (Friday is supposed to be 104! – UGH!) and this super simple Fresh Strawberry Mojito is just what I need to cool things down. (And keep me from wanting to move away for the next, um, 5 months or so).
Why do I live here again? Oh yeah, I hate snow! Compromises, people. Compromises.
Anyway, I ended my Friday- er, started my Friday evening, with one of these Strawberry Mojitos and let me tell you…it is a touchdown…a home run…a slam dunk!
OK, enough with the sports analogies, I can’t help myself…I have sports brain. AJ has been playing basketball in the background that is my life for, like, the past however many days (weeks?) since playoffs started. When will it end?
Cue eye roll now.
It’s really A-OK though because I have this ridiculously delicious Strawberry Mojito to make watching endless basketball at least somewhat more bearable.
Or at least thats what I’ll keep telling myself…

I must warn you though, the only problem (is it really a problem?) with this cocktail is that is goes down a leeeeeeetle too smoothly, which, after a few could be a little dangerous…
But, like all the cool kids say, YOLO 😉 (Is that still I thing?)

In the bottom of a tall glass, muddle together lime slices, fresh strawberries, mint leaves and sugar
Add 2 oz of white rum and enough ice to fill the glass
Pour soda water over ice
Garnish with fresh strawberries and lime, if desired
