With Memorial Day right around the corner (wait, WHAT?? ) I thought it was only appropriate to bring you a simple and delicious Greek Pasta Salad you can quickly whip up for your backyard BBQ festivities!

I don’t know about you, but we will be spending our Memorial Day grilling burgers and hot dogs by the pool. And by we, I mean AJ, because I probably won’t be getting off my raft except to refill my Strawberry Mojito, reapply sunscreen and fill my plate up with this yummy Greek Pasta Salad!

We bought our house a few years ago, mainly because we HAD to have a pool, and boy, am I glad we did. During the hellish AZ summer months we spend most weekends in the pool soaking up (or trying to survive) the blistering hot sun.

The dogs are absolutely terrified of the water so they usually steer clear and “lifeguard” from a safe distance, though we have attempted to teach them to swim (unsuccessfully) a few times. Maybe this year they won’t be so scared and we can finally teach them to love the pool as much as we do!

Wishful thinking…

See, like I said…terrified!

So maybe the dogs won’t be joining us in the pool this Memorial Day, but I can pretty much guarantee they will come around once those burgers and hot dogs hit the grill. Of course, if they’re lucky- and they always are- they will get their own special grilled treat.

Man, they really are living the dream!

Easy Greek Pasta Salad

Make this Easy Greek Pasta Salad for your next summer BBQ, or transform it into a quick weeknight meal by adding chicken, shrimp or steak!

Ingredients

  • 1 lb dry pasta, I used Farfalle
  • 3 ounces feta cheese, I used a Mediterranean Herb Blend
  • 1 pint cherry tomatoes, cut in half
  • 1/2 English cucumber, quartered and diced
  • 1/3 red onion, cut into thin slices
  • 14 ounce can of artichoke hearts, quartered
  • 1/3 cup chopped Kalamata olives
  • 3/8 cup Greek salad dressing, more or less to taste

Instructions

  1. Cook pasta according to package instructions, drain and set aside to cool

  2. In a large mixing bowl, add cooled pasta, feta cheese, cherry tomatoes, cucumber, red onion, artichoke hearts and olives

  3. Pour in dressing and gently mix together until all the noodles are coated in dressing. Add more dressing as needed. 

  4. Serve immediately, or store in the refrigerator until ready to serve.

    *Note: You may need to add more dressing right before serving if you make this in advance.  

  5. Enjoy!
