So, I’ve been a little M.I.A since umm…last year, but I’m back and I’m coming in hot with a cheesy, comforting and easy Chicken Parmesan Pasta Bake.

Since we last talked, I’ve gotten engaged (finally, after 8 years!), planned a wedding, got married and honeymooned in Maui! We had a great time planning our wedding and we had a beautiful ceremony and ridiculously fun reception, but boy are we glad to get back to normal life again!
And I am glad I don’t have to fit into a wedding dress anymore so I can eat all the things again. Especially this Chicken Parmesan Pasta Bake!
This recipe can be made in a just few easy steps:
First, boil up some pasta (whatever shape you like will work here- I personally like penne or rigatoni). Then, in an ovenproof skillet cook up some diced chicken breasts until cooked through, add some garlic, red pepper flakes and any other seasoning you like, pour in a jar of marinara sauce, add cooked noodles and some yummy Parmesan cheese and mix everything together. Top the whole thing with a breadcrumb mixture, a whole lot of mozzarella cheese and bake in a 400 degree oven for 5-10 minutes, or until the cheese is bubbly and golden brown. Top with basil for a little freshness and serve up a nice big bowl!

Preheat oven to 400 degrees.
Cook pasta al dente according to package instructions in a pot of generously salted water. Set aside when cooked.
In a small bowl, add Panko and Italian seasoned bread crumbs, ¼ cup of grated parmesan cheese and 1T of olive oil; stir (or use fingers) to combine until mixture resembles wet sand; set aside.
Season diced chicken with salt, pepper and Italian seasoning.
Heat olive oil and butter in a large ovenproof skillet over medium high-heat, brown chicken in skillet until cooked through (about 5-6 mins). Add minced garlic and crushed pepper flakes; cook for about 1-2 minutes. Add in jarred marinara sauce, bring to a simmer, reduce heat to low and let the sauce simmer for about 3-5 minutes. Season with salt and pepper, if needed.
